Fajita Lettuce Cups

I used to absolutely love fajitas back in the day but since I have been diagnosed I cannot find a decent gluten free wrap that does not break up when folded! Therefore, when I discovered these fajita lettuce cups I was over the moon!


Not only are they extremely easy to make, they are also cheaper and healthier than their tortilla wrap brothers!



  1. Simply cut up your chicken (they also work well with mince) and fry it until cooked
  2. Add in any vegetables you would like (I tend to use onions, carrots and sweetcorn)
  3. Add your preferred seasoning (a lot of the “normal” fajita mixes are gluten free)
  4. Then serve in the lettuce cups, top with some salsa, sour cream and cheese and voila!
