I used to absolutely love fajitas back in the day but since I have been diagnosed I cannot find a decent gluten free wrap that does not break up when folded! Therefore, when I discovered these fajita lettuce cups I was over the moon!
Not only are they extremely easy to make, they are also cheaper and healthier than their tortilla wrap brothers!
- Simply cut up your chicken (they also work well with mince) and fry it until cooked
- Add in any vegetables you would like (I tend to use onions, carrots and sweetcorn)
- Add your preferred seasoning (a lot of the “normal” fajita mixes are gluten free)
- Then serve in the lettuce cups, top with some salsa, sour cream and cheese and voila!
