Stuffed peppers are still relatively new to me and I am still trying out different fillings and ways of cooking them but last night’s creation was one of the good ones. Originally, the plan was to have spaghetti bolognese but after a bad few days food wise I decided to substitute the pasta for a pepper! Doesn’t sound that fair of a swap but let me assure you it was delicious!
Simply make your bolognese as you normally would (I used turkey mince tonight with garlic, onion, mushrooms and courgette), empty out a pepper and place it in a preheated oven for 5 minutes to allow it to soften. Then fill it up, making sure the bolognese is compressed, and serve with your favourite veggies!
Why not try adding some cheese on the top and popping the pepper back in the oven for another 5 minutes to let it melt?
